I used to live in Normandy, where the local speciality is tripes à la mode de Caen. Just seeing it squidged into glass jars in the supermarket was enough to make me walk faster.

I've eaten Ecuadorian ceviche a few times, and for me it beats the Peruvian version hands down. Surprised it isn't more well known too.
